Coffee Energy Bites
When you love coffee as much as we do, you want to put it in everything! I’m always open to try a new recipe that involves coffee. So when I found these Coffee Energy Bites from BlissfulBritt.com, I knew I had to try them .
They were so easy to make! And so delicious! They’re packed with protein and have the added benefit of a caffeine boost! What a great snack/pick me up/way to start your day. And they’re gluten and dairy free, which is also always a plus. Of course, we can’t try a new recipe without making multiple batches and tweaking it every time… We couldn’t find a single version that we didn’t love, but this recipe ended up being our base:
· 1 cup dry whole grain oatmeal
· 1/2 cup ground flaxseed
· 3 tblsp fresh ground UN-brewed coffee beans
· 3/4 cup creamy peanut butter or almond butter
· 1/4 cup of honey
· 1/4 cup of strongly brewed coffee
· 1 Tbs vanilla
· 1/4 cup chocolate chips
· 1/4 cup dried cranberries
Mix the oatmeal, flaxseed and coffee grounds in a bowl. Then, stir in the honey, vanilla and peanut butter. Once that is well mixed, add the chocolate chips and cranberries and mix really well. Then, chill in the refrigerator for about 20 minutes. Once the mixture is cool, roll into balls of whatever size you like. I got about 14 out of one recipe. Enjoy!
That’s it! So easy! The original recipe called for a little less coffee and vanilla and we loved that, but we also liked the addition because it amped-up the coffee flavor. Then we tried them with raisins instead of cranberries and then with nuts instead of chocolate, and they were all equally delicious. If you want, you can leave the bowl in the fridge for longer (like overnight), uncovered to let the mixture dry out a little more and then use it as a granola! There is a lot of room for tweaking this recipe- try what you like and let us know!
